SAUSAGE CORN BREAD CASSEROLE 
1 c. yellow cornmeal
1 c. milk
1/2 tsp. baking soda
1/4 c. bacon grease (optional)
1/2 lb. grated Cheddar cheese
2 eggs, well beaten
1 can cream style corn
1 lb. sausage
1 onion, chopped

Grease iron skillet, 9 inch square, or 9 x 12 inch dish. Saute 1 pound sausage and drain. Mix batter of cornmeal, milk, soda, grease, eggs, salt and corn. Pour half of batter into greased skillet. Sprinkle on cheese, the meat and onion.

Top with remaining batter. Bake 45-50 minutes at 350 degrees or microwave on high (in microwave dish) for 10-15 minutes. This retains heat well, is excellent warmed up, perfect served with beans.

Since microwave ovens vary in power, you may need to adjust your cooking time.
