VIRGINIA CRAB CAKES 
1 lb. fresh crabmeat, flaked
8 saltine crackers, crushed
1 egg
1 tbsp. mustard
1/2 - 1 tsp. red pepper (hot)
Fresh parsley, chopped
Salt and pepper to taste

Mix together all ingredients. Shape into patties and saute in hot butter until golden brown on both sides. Serves 4 to 6.
