CHOW MEIN FOR TWO 
8 oz. turkey breast tenderloin, cut into bite-size pieces
2 tsp. cornstarch
1/2 c. fresh bean sprouts
1/4 c. thinly sliced onion
Chow mein noodles or cooked rice
1 tbsp. reduced sodium soy sauce
1 rib celery, diagonally sliced 1/2" thick
4 med. mushrooms, sliced

Place turkey in a 1 quart casserole dish. Stir in soy sauce and cornstarch, coating each piece of meat. Add celery, bean sprouts, onion and mushrooms; cover. Stirring midway through cooking, microwave on high 5-6 minutes. Let stand 2 minutes before serving over chow mein noodles or rice. Makes 2 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
