APPLESAUCE OATMEAL MUFFINS 
2 1/2 c. applesauce
2 eggs
3/4 c. brown sugar
1/4 c. olive oil or canola oil
1 1/2 c. rolled oats
1 c. whole-wheat flour
1 c. all-purpose flour
1 tsp. baking soda
1 tsp. baking power
1 1/2 tsp. salt
2 tsp. cinnamon
1 1/2 c. raisins

In a large bowl, combine applesauce, eggs, brown sugar and olive oil; set aside. In a medium bowl, combine oats, flours, baking soda, baking powder, salt and cinnamon. Add to applesauce mixture. Stir with wire whisk just until dry ingredients are moistened. Stir in raisins. Pour into paper-lined muffin pans. Bake at 350 degrees for 15-20 minutes or until toothpick inserted into center comes out dry. Makes 12 muffins.
