AUNT BERTA'S BANANA BREAD | |
3 lg. or 4 med. over-ripe bananas 2 eggs (or Egg-Beaters equivalent) 1 c. sugar 1/4 lb. butter (1 stick) 1 c. flour 1 tsp. baking soda 1 tsp. vanilla Nuts and dates (optional) Cream room temperature butter with sugar until fluffy. Add well beaten eggs, mashed bananas and vanilla. Add flour and baking soda. Mix until well blended with wooden spoon. (It will be a little lumpy.) Add nuts and/or dates (both chopped) if desired...about 1/2 plus cup each, to taste. Pour into greased 4x9 inch baking pan. Let sit in pan for 20 minutes, then bake in 350 degree oven for 50-55 minutes. (Toothpick should come out clean.) Let cool 10 minutes and remove from pan. |
