WHITE BEAN POT SOUP 
2 c. Great Northern beans, dried
1 lb. knockwurst or bratwurst, cut in 1/4 inch slices and halved
7 c. water
1 tbsp. melted butter
3/4 lb. smoked ham, cubed
4 carrots, diced
3/4 tsp. salt
1/4 tsp. pepper
Pinch of ground cinnamon
1/8 tsp. marjoram
1/4 tsp. paprika
1 lg. tomato or 1 can of tomato wedges
1 lg. onion, chopped
2-3 tbsp. parsley flakes
1/4 c. chopped celery
1 clove garlic, minced
1 sm. bay leaf
1/8 tsp. dried whole thyme

Sort, wash beans. Put into large pot and cover with the water. Bring to boil and cook 2 minutes. Remove from heat, cover and let soak 1 hour. Set onto heat and bring to boil, then and heat and simmer 1 hour. Add all but knockwurst or bratwurst. Stir well. Bring to boil and over low heat and simmer 25 minutes or until vegetables are tender. Stir occasionally. Remove bay leaf. Brown knockwurst or bratwurst in butter and stir into soup and serve. Makes 3 1/2 quarts.
