HOMEMADE MUFFIN MIX 
10 c. all-purpose flour
1 1/2 c. sugar
2 3/4 c. shortening (Crisco)
1 tbsp. salt
1/3 c. baking powder

In a large bowl, stir together flour, sugar, baking powder and salt. Use a pastry blender and cut in shortening until mixture resembles coarse crumbs.

Transfer mixture to large sealed container. Stores up to 6 weeks at room temperature or up to 6 months in the freezer. Allow frozen mix to come to room temperature before using.

Makes about 14 cups mix.
