CURRIED CHICKEN | |
1 onion, chopped 1 1/2 tsp. pepper 1 tbsp. garlic, crushed 1 tsp. thyme leaves 1/4 c. water 1 1/2 tbsp. salt 2 lb. boneless chicken breast 2 tbsp. curry powder 1 lg. potato, diced 1 tsp. cayenne pepper Cut up the chicken into small pieces and wash with one lime or one lemon in warm water. In a large bowl combine chicken, onion, black pepper, garlic, curry powder, thyme leaves, cayenne pepper and water. Marinate for about 5 to 10 minutes or until ready to cook. Peel and dice the potato. Put the marinated chicken and potato into a large skillet. Cover and cook on medium heat for about 45 minutes to one hour, stirring occasionally. Meadow Creek Elem. |
