CHICKEN WITH BERNAISE SAUCE 
Saute 8 pieces chicken in hot oil and brown well. Salt and pepper. Add 1 chopped onion and 2 chopped carrots and dash of thyme. Brown in oven 25-30 minutes at 400 degrees. Cook 4 slices of bacon and add 1 jar pearl onions and 1/2 cup sliced mushrooms. Remove chicken to serving dish, top with bacon mixture. Deglaze pan with chicken stock, add flour to thicken.
