CARROT CASSEROLE 
4 c. sliced carrots
1/2 c. ground onion
1/4 c. butter
10 soda crackers, crushed
3/4 c. shredded cheddar cheese
1/2 tsp. salt
1/8 tsp. pepper

Cook carrots until just tender. Brown onions in butter; add carrots. Mix together the cheese, crackers, salt and pepper. Place layer of carrots in buttered casserole, then a layer of cheese and cracker mixture.

Continue with layers until ingredients are used up, ending with a layer of cheese. Bake at 350 degrees for 20 minutes.
