HONEYED CARROTS 
2 lbs. carrots, thinly sliced
1 tbsp. butter
2 tbsp. water
Salt
1 tbsp. lemon juice
1/4 c. honey
A pinch of ground cinnamon

In a saucepan, combine the carrots, butter and water. Add salt, cook and cover for about 10 minutes over low heat. Stir in the lemon juice and honey and cook for about 2 minutes. Sprinkle with cinnamon and remove from heat. Serve.
