PEACH COTTAGE CHEESE LOAF 
1 can (1 lb. 14 oz.) peaches, sliced & diced
2 env. plain gelatin
2 c. cottage cheese
1 tbsp. sugar
2 tbsp. lemon juice
1 c. chopped nuts
1 tsp. grated lemon rind
1 c. sour cream
1 c. finely chopped celery
3/4 c. mayonnaise

Drain syrup from peaches and use to soften gelatin. Dissolve over hot water. Beat cottage cheese, mayonnaise and sugar. Add diced peaches, lemon rind, juice and sour cream, nuts and celery. Pour into a loaf pan and chill until firm, turn out and slice. Makes 18 servings.

Can use pineapple in place of peaches and maraschino cherries in place of celery.
