CHRISTMAS ALMOND BRITTLE 
1/4 c. sugar
1/2 c. honey
10 tbsp. butter
1 lb. walnuts or almonds, chopped (about 4 c.)

Put sugar in heavy frying pan. Heat the sugar over very low heat until it has melted and is delicately browned. Stir continuously. Add the honey and butter and simmer 20 minutes. Stir in the nuts and cook for 10 minutes. Pour into well-greased shallow pan and let harden. Break into pieces. Mixed nuts may be used. Makes about 1 1/2 pounds.
