EXOTIC CHICKEN SALAD 
3 c. cooked chicken, chopped
2 tsp. grated onion
2 c. chopped celery
1 c. slivered almonds and/or chopped pecans
2 c. seedless grapes
2 (6 oz.) cans water chestnuts, drained & sliced (opt.)
Salt & pepper to taste
1 tsp. tarragon (opt.)

Mix all ingredients together and serve on fancy sandwiches or can be eaten alone.
