QUICHE 
Crust:

2/3 c. flour
1/4 tsp. salt
3 tbsp. shortening
1/3 c. cottage cheese

Filling:

3 slightly beaten eggs
1 c. evaporated milk
canned vegetables (leftovers work great)
shredded cheese
salt and pepper to taste

Mix crust ingredients together and press into bottom and sides of a pie pan.

Mix filling ingredients together and pour into pie crust.

Bake at 350°F for 30 minutes. Top with more cheese if you like and bake for another minute or two.
