ITALIAN ZUCCHINI 
5 med. zucchini squash, peeled and sliced
1 med. onion, diced
1 (16 oz.) can stewed tomatoes
1 (4 oz.) can mushrooms, drained
2 tbsp. soy sauce
1 1/2 tsp. garlic powder

Saute onion in small amount of hot oil until light brown. Add zucchini and saute 10 minutes mixing twice. Add tomatoes and mushrooms. Simmer covered until zucchini is tender but soft on small flame. Add soy sauce and garlic powder mixing 5 minutes. Delicious hot. Great for BBQ.
