TWICE COOKED DIVINITY 
2 c. sugar
1/2 c. white corn syrup
1/2 c. water
Pinch of salt

Stir until dissolved. Boil to medium ball stage (240 degrees). Slowly pour 1/3 over 2 stiffly beaten egg whites, beating constantly. Cook remaining syrup to very hard ball stage (265 degrees). Beat syrup in candy mixture; continue beating until it holds its shape, add 1 teaspoon vanilla.

Drop from teaspoon onto a greased waxed paper. Swirl each piece to a peak. This is a failure proof way to make divinity. I like to add 1/2 cup nuts, also make several batches and add food coloring for a pretty arrangement.
