LOADED MASHED POTATOES 
8 large baking potatoes
1 bag shredded Colby cheese
1 jar sour cream
1 package of bacon
5 fresh green onions
8 tsp. butter

Wash potatoes to remove any dirt and/or pesticides. Wrap baking potatoes in aluminum foil and place onto a baking rack at least 1 inch apart. Bake on low for about 1 hour or until potatoes have a soft inside.

Remove aluminum foil and slice potatoes in half. Scoop out the inside of the potato into a large bowl and discard skins. Mash the potatoes in bowl with 8 tsp. butter. Place cheese, bacon, and chopped green onions into the bowl and mix.

Spray a casserole dish and with non-stick cooking oil and scoop the potatoes into the dish. Place extra cheese on top of the potatoes and heat at 350°F for 5 minutes or until cheese is melted. Eat and enjoy.
