SPANISH PORK CHOPS 
6 pork chops, 1/2 inch thick
Fat
1 #2 can tomato juice
2 c. water
1 c. uncooked rice
1 minced onion
Salt and pepper

Flour pork chops and brown in hot fat. Place in baking dish and add tomato juice, water, rice, onion, salt and pepper. Bake in 350 degree oven for 1 hour and 30 minutes. Yield 6 servings.
