KELLY'S FRIED STEAK WITH CREAM
GRAVY
 
1 lb. beef round steak, cut about 1/2 inch thick
All-purpose flour
3 tbsp. salad oil
1 c. milk
1/2 tsp. salt
3 c. hot mashed potatoes

On waxed paper, coat round steak on one side with flour then with meat mallet pound steak until flour disappears; turn steak and repeat on other side. Cut steak into four pieces. In 10 inch skillet over high heat, in hot salad oil, fry steak 3 to 5 minutes on each side until well browned. Remove to heated platter. For gravy, into drippings in skillet over medium heat, stir 2 tablespoons flour until well blended. Gradually stir in 1/2 cup water into flour mixture, scraping to loosen browned bits. Stir in milk, and salt, and cook, stirring until gravy is thickened. Serve steak and gravy with mashed potatoes. Makes 4 servings.
