OVEN-FRIED CHICKEN 
1/4 c. shortening
1 1/2 c. potato buds (mashed potatoes, dry)
1/3 c. grated Parmesan cheese
1 tsp. salt
1/2 tsp. pepper
2 1/2 to 3 lb. fryer chicken, cut up into parts
1 egg, beaten

Heat oven to 425 degrees. Melt shortening in rectangular pan (13 x 9 x 2 inches) in oven. Mix potatoes, cheese, salt, and pepper. Dip chicken into egg, roll into potato mixture. Place chicken, skin side up, in pan. Bake uncovered until done, about 1 hour. 6 servings.
