PEA PICKIN' CAKE 
CAKE:

1 box yellow cake mix
4 eggs
1/2 c. oil
1 can mandarin oranges (11 oz.) & juice

ICING:

1 (9 to 12 oz.) frozen whipped topping
1 can (15 or 16 oz.) crushed pineapple
1 instant vanilla pudding mix (5 1/2 oz.)

Beat eggs and oil with cake mix. Then add oranges with mixer on "fold". Pour in 3 wax paper lined cake pans. Bake at 350 degrees for 22 to 25 minutes or until tests "done". Cool and remove from pans. Can be wrapped and frozen for later use.

Mix pineapple (undrained) with pudding, beating until thickened. Add topping, folding until smoothly mixed. Ice cake layers, top and sides.
