PARMESAN CHICKEN 
2 to 3 lbs. chicken pieces (legs, thighs and breasts)
1/2 c. Parmesan cheese
1/2 c. whole wheat flour
1/4 c. flour
1/4 c. bread crumbs
1/4 c. corn meal
1 tbsp. paprika
1 tsp. garlic powder
Sprinkle of salt and pepper
1/2 c. melted butter
1/2 c. skim milk

Remove skin from chicken, wash and pat dry. Put the next 8 ingredients into a plastic bag. Shake well. Pour 1/2 cup skim milk into a bowl, dip chicken into milk and then put pieces into bag and shake. Place chicken into a pan that has been sprayed with a cooking spray. Brush the chicken lightly with melted butter. Place in a preheated 350 degree oven and bake for approximately 1 hour until juices run clear.
