CRISPY LIVER WITH SWEET 'N' SOUR
SAUCE
 
Makes 2 servings.

1/3 c. plus 2 tsp. seasoned dried bread crumbs
1 packet instant onion broth and seasoning mix
10 oz. calf's liver, cut into 1x2 inch strips
2 tbsp. water
1 tbsp. plus 1 tsp. reduced-calorie apricot spread (16 calories per 2 tsp.)
1 tbsp. teriyaki sauce
1 tsp. lemon juice

Spray broiling pan with nonstick cooking spray and set aside. In bowl combine bread crumbs and broth mix; dredge liver in crumb mixture and transfer to sprayed pan. Broil 3 inches from heat source until browned, about 4 minutes; turn liver strips over and broil just until other side is browned (do not overcook).

While liver is broiling, in small saucepan combine remaining ingredients and heat; serve as dipping sauce with liver.

Each serving provides: 4 Protein Exchanges; 1 Bread Exchange; 20 calories Optional Exchange.
