PORK CHOP L'ORANGE 
4 nice pork chops
1/4 c. flour (all-purpose)
3 tbsp. olive oil
1 green pepper, seeded & sliced
1 onion, peeled & sliced
3 1/4 tbsp. brown sugar
2 c. freshly squeezed orange juice
1 tbsp. Dijon mustard
Salt & pepper to taste
1 orange, peeled & sliced

Dust chops with flour and brown in olive oil in medium-sized skillet; remove from pan. Add pepper and onion; fry on medium heat until they soften. Stir in sugar, orange juice, Dijon, salt and pepper to taste. Raise heat and bring mixture to a boil. Add pork chops to the pan, lower heat, cover and simmer for 12 to 15 minutes. Turn chops, put orange slices on top, cover and cook another 15 minutes. Serve right away.
