MARINATED RABBIT 
1 rabbit
1/2 c. melted butter
1/2 c. salad oil
1/3 c. lemon juice
1/4 c. soy sauce
1 clove minced garlic
1 tsp. oregano
1 tbsp. chopped parsley
1/2 tsp. salt
1/4 tsp. pepper

Cut rabbit into quarters, or smaller pieces if desired. Place in a shallow baking pan and cover with marinade of the above ingredients. Allow to stand overnight at room temperature. When ready to cook, brush the marinade from the meat and place meat on a baking pan at 375 degrees for about half an hour, long enough for the rabbit to brown. Reserve marinade, and with a pastry brush, lightly brush it over meat while it continues to cook, using about a quarter of its volume. Allow about 15 minutes in the oven, then baste again at 15 minute intervals, until rabbit is tender. Serves 3-4.
