CHEESE CAKE 
STEP 1:

1 lg. can crushed pineapple
1/2 c. sugar
1 tbsp. cornstarch

Cook until thick.

STEP 2 - CRUST:

4 tbsp. butter
2 tbsp. sugar
1 1/2 c. flour
1 1/2 tsp. baking powder
5 tbsp. water

Cream butter and sugar. Add rest of ingredients and mix just until they hold together. Press dough into a 13"x9"x2" baking pan. Press and flatten toward edges and up the sides.

STEP 3 - FILLING:

1 lb. crema cheese
3 eggs
5 tbsp. sugar
3 tbsp. flour
1/2 tsp. lemon extract
2 c. milk

Put softened cream cheese and rest of ingredients into blender. Blend until smooth. Spread pineapple filling on crust and pour on filling. It seems thin but sets very nicely. Sprinkle with nutmeg and bake at 325 degrees for 1 hour.
