CANNED PEARS 
1/2 bushel canning pears
5 lbs. sugar
3 lemons

Peel and cut pears in small pieces. Place one layer pears and one layer sugar in heavy roast pan. Cover pan with dish towel. Let soak overnight. Next morning cook over low heat, add sliced lemons until pears turn light brown and dripping syrup. Put in boiled jars and seal.
