CRANBERRY CONSERVE | |
1 lg. orange 1 c. water 1 lb. fresh cranberries 3 c. sugar 2 c. water 2/3 c. white raisins 1/8 tsp. salt 2/3 c. chopped walnuts Wash, but do not peel orange. Cut in eighths and put in blender with 1 cup water. Chop into small pieces. Place in large kettle the 2 cups water. Bring to boil and boil gently for 15 minutes or until tender. Wash and clean cranberries and add to kettle with sugar, raisins and salt. Boil rapidly, uncovered, stirring frequently 8 to 10 minutes or until thick. Add nuts during the last 5 minutes of cooking. Makes about 3 pints. |
