SOFT GINGERBREAD WITH ORANGE
SAUCE
 
1/2 c. butter
1 c. sugar
1 c. molasses or dark corn syrup
2 eggs, well beaten
3 c. flour, sifted
2 tbsp. baking soda
2 tbsp. ginger
2 tsp. cinnamon
1 tsp. allspice
1/2 tsp. cloves
1/2 tsp. nutmeg
1 c. buttermilk

Cream butter, gradually add sugar, cream until fluffy. Add molasses and beaten eggs. Sift flour. Measure and sift again with soda and spices. Alternately add flour and milk to butter mixture (add flour first and last.) Beat thoroughly. Bake in well greased and floured square or oblong cake pan. Bake at 400 degrees for approximately 40 minutes.

ORANGE SAUCE:

1 c. sugar
2 tbsp. cornstarch
1/4 tsp. salt
1 c. orange juice
1/4 c. lemon juice
1/4 c. water
1 egg yolk, beaten
1 tbsp. orange rind, grated

Combine sugar, cornstarch and salt in a small saucepan. Gradually stir in fruit juices and water. Cook over medium heat, stirring constantly, until mixture thickens and boils. Slowly stir a small amount of hot mixture into egg yolk; add to remaining hot mixture, stirring constantly. Boil 1 minute longer, stirring constantly. Remove from heat and stir in orange rind. Makes about 2 cups.
