SOFT CUSTARD SAUCE 
2 eggs, slightly beaten
1/4 tsp. salt
1 tsp. vanilla
2 tbsp. sugar
1 1/2 c. skim milk

Combine all ingredients except vanilla, cook in double boiler over hot not boiling water, stirring constantly. When custard coats a silver spoon, remove from heat, cool at once by placing pan in bowl of ice water, stir in vanilla. Serving suggestion: serve over fruit (sliced peaches, oranges, banana or gelatin). Yield: 8 servings, 1/4 cup per serving, 54 calories, 2 fats.
