MUSTARD SHORT RIBS | |
4 lb. beef short ribs, cut in pieces 1/3 c. prepared mustard 2 tbsp. lemon juice 2 cloves garlic, crushed (optional) 1 tbsp. sugar 1 tsp. salt 1/2 tsp. pepper 4 med. onions, sliced 1/4 c. shortening Place meat in shallow dish (on rack if desired). Mix mustard, lemon juice, garlic, sugar, salt and pepper; spread on meat. Top with onions. Cover tightly and refrigerate 24 hours, turning meat occasionally. Brown ribs in shortening over medium heat. Pour off drippings. Add onions and pour marinade over meat. Cover tightly, cook in 350 degree oven for 2 hours. Serves 4. |
