ZUCCHINI APRICOT JELLY 
6 c. shredded zucchini
6 c. sugar
1 med. can drained crushed pineapple
2 (3 oz.) boxes apricot Jello
1/2 c. lemon juice

Bring zucchini and sugar to boil until clear 5 minutes. Add next ingredients. Boil 1 minute (rolling boil). Pour in jars and seals. You can substitute raspberry Jelly, if you wish.
