PATTY'S TWICE BAKED POTATOES | |
6 lg. baking potatoes 1/2 stick butter, sliced 1/2 c. sour cream 1/3 c. milk Salt and pepper to taste Shredded Cheddar cheese Bake potatoes for one hour or until soft in a 375 degree oven. Remove and let cool slightly. Cut potatoes in half lengthwise. Spoon inside out into a bowl, leaving neat empty shells. Mix together potato, butter, sour cream, milk, salt and pepper. If potatoes seem to dry, add milk as needed. Mix as you would mashed potatoes. Refill ten of the twelve shells so that the potatoes are overflowing. Sprinkle with shredded cheese. When ready to serve, heat at 350 degrees for about 10 minutes until cheese melts and potatoes are warm all through. These freeze very well for future meals. |
