PARMESAN BAKED POTATOES 
6 baking potatoes
1 green onion, thinly sliced
2 eggs, slightly beaten
1/3 c. Parmesan cheese
1/4 c. butter melted
Salt and pepper
Hot milk
Parmesan cheese
Paprika

Scrub potatoes; lightly grease skins. Bake in 400 degree oven for 1 hour or until done. Cut thin slice off top of potatoes. Scoop out inside and mash. Add onion, eggs, 1/3 cup Parmesan, butter, salt and pepper and enough hot milk to make proper consistency (about 1/4 cup). Beat until fluffy. Carefully pile mixture in potato shells. Brush tops with additional butter; sprinkle with additional Parmesan cheese and paprika. Bake in 350 degree oven for 20 to 30 minutes.
