BANANA CUPCAKES 
1 c. sugar
1 egg
1 1/2 c. flour
1 tsp. nutmeg
1 tsp. vanilla
1/2 c. butter
1 c. ripe mashed bananas
1 tsp. baking soda dissolved in 2 tbsp. hot water

Cream sugar and butter together. Add egg and then bananas. Add remaining ingredients, mixing each, one at a time. Pour into greased muffin pan. Bake in a 375 degree oven for 15 minutes.
