POTATO YEAST ROLLS | |
1 c. mashed potatoes 1 c. boiling water 3/4 c. shortening 1/2 c. sugar 3/4 salt 2 eggs, beaten 6 1/2 c. all-purpose flour 1 pkg. yeast 1/2 c. lukewarm water Add shortening, sugar and salt to boiling water. Cool mixture to warm. Soften yeast in the 1/2 cup of warm water. Add yeast to the mixture of shortening, sugar and salt. Make a soft batter using one cup of flour. Add eggs and mashed potatoes. Let rise until bubbly. Add remainder of flour gradually and mix until smooth. Put in a greased bowl and cover. Let rise until doubled. Roll out and cut on floured board. Make turnovers and brush before folding. Bake at 350 degrees until brown. |
