TACO RICE CASSEROLE 
1 c. brown rice
1 pkg. taco seasoning mix
1 (8 oz.) can tomato sauce
2 c. chicken, cooked & shredded
1 c. refried beans
1/2 c. Cheddar cheese, grated
8 oz. shredded lettuce
3 chopped tomatoes

Cook brown rice and place in non-stick 2 quart casserole. Combine taco seasoning mix with tomato sauce; add chicken and spread over top of rice. Spread refried beans over the chicken. Sprinkle with cheese and heat in oven until cheese melts. Top with lettuce and tomatoes. You can substitute chicken with ground beef or ground turkey. Serve with tortilla chips.
