TACO RICE CASSEROLE 
1 c. brown rice
1 pkg. taco seasoning mix
1 (8 oz.) can tomato sauce
2 c. chicken, cooked & shredded
1 c. refried beans
1/2 c. cheddar cheese, grated
8 oz. lettuce, shredded
3 tomatoes, chopped
1 recipe Tortilla Triangles

Cook brown rice and place in non-stick 2 quart casserole. Combine 2 seasoning mix with tomato sauce. Add chicken and spread over top of rice. Spread refried beans over chicken mixture. Sprinkle with cheese and heat in microwave or oven until cheese melts. Serve topped with lettuce and tomatoes and Tortilla Triangles.

TORTILLA TRIANGLES:

12 corn or flour tortillas

Leave tortillas whole for Tostados or cut into 6 pie shaped pieces for chips. Place on non-stick baking sheet and bake at 300 degrees for 8 to 10 minutes. Watch closely! They burn easily. Cool before serving. Store in air tight container.

Since microwave ovens vary in power, you may need to adjust your cooking time.
