RICE PUDDING 
1/3 c. white rice
5 c. half & half
2 eggs
2 tsp. vanilla
1/4 c. water
1/2 c. sugar
3 tbsp. butter, melted
Cinnamon

In a saucepan, over low heat, cook rice and water, uncovered until water has evaporated. In another saucepan, warm half and half, and then stir it into the rice. Cook rice, uncovered, 25 to 30 minutes until rice is soft, stirring often. Remove from heat.

Add sugar to rice and cream mixture. Mix together eggs and butter, and blend egg mixture into rice. Stir in vanilla. Let mixture cool. Refrigerate until chilled, sprinkle with cinnamon. Makes 6 servings.
