PINEAPPLE FRUIT REFRESHER 
1 med. size pineapple
2 each bananas, peaches, nectarines
Lemon juice
1 c. each strawberries & honeydew or casaba melon cubes
2 tbsp. honey
1 tbsp. creamy peanut butter
1 c. unflavored yogurt

Cut pineapple in half lengthwise. Leaving a 1/2" thick shell, cut out fruit from each half and cut fruit into cubes. Peel bananas and cut into 1/2" thick diagonal slices. Peel, pit, and slice peaches (no need to peel nectarines, if used). Sprinkle bananas and peaches with lemon juice. Gently toss together pineapple, bananas, peaches, strawberries and melon cubes; pile into pineapple shells. Cover and chill for as long as two hours.

In a small bowl, stir together honey and peanut butter; blend into yogurt. Cover and chill, if made ahead.

At the table, serve fruit from pineapple and shells; pass yogurt sauce and your choice of toppings (chopped peanuts, granola, or toasted coconut) in individual bowls. Makes 4 to 6 servings.
