APPLE BUTTER LOAF CAKE | |
2 c. flour 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. nutmeg 1/2 tsp. cinnamon 1/2 tsp. ground cloves 1/2 c. butter, softened 3/4 c. sugar 2 eggs 1/2 c. buttermilk 1 c. apple butter Preheat oven to 375°F. 1. Sift flour, baking soda, salt, nutmeg, cinnamon and cloves. Set aside. 2. Beat together butter, sugar and eggs until fluffy. 3. Mix in half flour mixture. Stir in buttermilk. 4. Add remaining flour mixture and apple butter. Stir until well blended. 5. Pour batter into a greased loaf pan. 6. Bake for 15 minutes and reduce temperature to 350°F. (Do not open oven for at least 40 minutes to test). 7. Test cake for doneness using a toothpick or cake tester. Tester should come out clean when cake is done or center should spring back when touched lightly with fingertips. Do not open the oven too soon or the cake will fall! 8. Remove cake from oven; cool five minutes then run a dull knife around edges to free cake from pan. 9. Serve with butter, ice cream or spread with whipped cream cheese. Makes 10-12 servings. |
