IRISH SODA BREAD 
4 c. white flour
1 tsp. salt
1 c. buttermilk

In a large bowl mix dry ingredients. Add the buttermilk and stir into a soft dough with a wooden spoon. With your floured hands knead lightly into a ball and turn out onto a lightly floured baking sheet.

Cook in a 10 inch iron skillet, floured. First flour the pan and put on stove on high. Watch carefully and when the flour turns brown, put on low heat then press the dough inside so that it's evenly distributed. Then flour the top.

Cook on low for 35 minutes, it will rise nicely. Then turn it over with a spatula to cook the other side for another 35 minutes. Insert a knife and if it comes out clean, then it's done. Cool on wire rack.
