APPLE FRITTERS 
2 eggs
1/2 c. sugar
1/2 tsp. salt
1 1/2 c. diced apples
1 c. all-purpose flour
1/4 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. ginger
1 tbsp. melted butter
1 tsp. vanilla
Vegetable oil
Confectioners' sugar

Beat eggs, sugar and salt until light and fluffy. Add apples and mix well. Sift flour, baking soda and baking powder together. Add to egg mixture. Add cinnamon, ginger, butter and vanilla; mix well. Refrigerate batter for 2 hours. Drop by teaspoon into deep fat (375 degree) and fry for 3-5 minutes. Drain on paper towels. Sprinkle with confectioners' sugar (2 dozen).
