CHAMBORD FLAN | |
3/4 c. sugar 1 qt. milk 1 tsp. vanilla 6 eggs 1 c. sugar Caramelize 3/4 cup sugar in souffle dish (melt over low heat, stirring constantly, until the syrup turns a golden brown. If your souffle dish cannot be used with direct heat, use a heavy pan and pour syrup immediately into an oven proof souffle dish). Scald milk, add vanilla. Beat eggs and 1 cup sugar together. Add milk mixture and beat again. Pour over caramelized sugar. Bake at 300 degrees in a water bath for 30 to 60 minutes, or until a knife inserted in the center comes out clean. Refrigerate. |
