SALMON CHOWDER 
1 lb. salmon fillet
2 c. diced potatoes
1/2 c. chopped onion
1 c. water
2 c. milk
2 tbsp. diced salt pork or 3 slices bacon
2 tbsp. butter
Salt
Pepper

Fry salt pork or bacon lightly (butter may be used in placed of meat); add onions and cook until tender, but not brown. Add water, potatoes, salt and pepper; simmer for 15 minutes. Skin fillets, if they haven't been, cut in cubes, removing any bones; add to pan and simmer for 10 to 15 minutes, until potatoes are tender. Add milk and continue simmering until hot, but not boiling; remove from heat and stir in butter. Variations: Season chowder with garlic salt, paprika, parsley, or thyme. Add chopped carrots, celery or a cup of chopped drained tomatoes.
