MRS. CADE'S VEGETABLE PIE 
1 to 2 bunches green onions, chopped
2 to 4 tbsp. butter
2 medium zucchini, sliced
3 medium squash, sliced
8 oz. mushrooms, sliced thick
2 tomatoes, peeled, chopped and drained
1 uncooked puff pastry crust
1 c. Hellmann's mayonnaise
1 c. grated Mozzarella cheese
1 tsp. basil
1 tsp. garlic powder
1 tbsp. parsley
Salt and pepper

Sauté onions and mushrooms until tender. Add basil, garlic powder, parsley, salt and pepper. Remove from skillet. Briefly sauté zucchini, squash and tomatoes and combine with onions and mushrooms. Drain well! Pour into a 10-inch pie plate which has been lined with puff pastry.

Mix mayonnaise and cheese and spread over top. Push mixture to edges to seal.

Bake at 425°F for 15 minutes. Reduce temperature to 350°F and bake an additional 45 minutes.

Serves 6 to 8.
