WESTERN CHEESE SAUCE 
2 tbsp. bacon fat
3 tbsp. flour
1/8 tsp. dry mustard
1 1/2 c. milk
1/2 c. diced sharp Cheddar
Salt
Hot pepper sauce
Worcestershire
1/4 c. chopped green onions with tops

In saucepan, blend bacon fat, flour and mustard. Gradually stir in milk, and cook, stirring, until thickened. Add cheese and stir until smooth. Season to taste with salt, hot pepper sauce and Worcestershire. Remove from heat and stir in green onion. Makes about 1 3/4 cups.
