STEVE'S RIGATONI MACARONI & CHEESE | |
1 (16 oz.) box Rigatoni noodles 16 oz. shredded Cheddar cheese 8 oz. shredded Mozzarella cheese 8 oz. shredded Mexican "fiesta" blend cheese 1 (8 oz.) pkg. cream cheese, softened 1 cup dairy sour cream 1/2 cup (1 stick) butter, melted 1 pint heavy whipping cream 1 tsp. salt 1 tbsp. Stevia (or sugar to your liking) Cook Rigatoni noodles per package directions. Set aside. Preheat oven to 350°F. Melt butter in large bowl, add softened cream cheese, mix well, dairy add sour cream, salt and sugar, mix well, then add all the shredded cheeses. Mix/toss well. Spread mixture in a 9x13-inch baking dish or pan as evenly as possible, then pour the heavy cream evenly over the top of the mixture, using the spoon to make some openings if needed to allow the cream to soak in well. Cover tightly with aluminum foil and place dish in center of middle rack of the oven. Bake at 350°F for 45 minutes. Allow to cool a bit before serving. Submitted by: Steven Wilkes |
