SOUR CREAM BISCUITS | |
2 c. bread flour 1/2 tsp. salt 2 tsp. double acting baking powder 1 tbsp. sugar 1/2 tsp. baking soda 5 tbsp. butter, cut up, chilled 1/2 c. sour cream 1/2 c. milk or buttermilk or water (if out of milk) In a large bowl sift together flour, salt, baking powder, sugar and soda. I use a wire whisk. Cut in butter chunks. I use a hand mixer and begin with it set on low speed. Mix until it has a grainy appearance. Add sour cream and milk; mix by hand. Then turn dough out onto a floured surface and knead for 1/2 minute. Roll dough to 1/2 inch thickness and cut with biscuit cutter. (Mine are about 2 inches across.) Bake for 10-12 minutes at 450 degrees. Do not over bake! These are very tender and almost don't need to be buttered. Serves 1-2 dozen. |
